Applies to all Recipes

In line with food safety management systems please ensure that gloves are worn at all times whilst creating sandwich fillings.

Choose a large suitable, clean & sterilised mixing bowl.  It is easier to mix the recipes in a bowl than in a bucket.

Ensure measuring scales are available and calibrated

Always start with the sauce (weighed) - refrigerate when opened

Then add the protein and other ingredients where applicable (weighed).  This helps blend the sauce through the product.  Ensure all finished products are refrigerated in an airtight re-sealable container dated with 3 days shelf life.

Sauces once opened need to be refrigerated and used within 28 days
